This coffee is the clean, fruity one. Cherries get pulped and fermented for a day or two, then washed with clean water and dried slowly — about 18 days — which is what gives it that bright, tea-like character: rhubarb, peach, floral tones underneath. It comes from smallholder farms around the Beloya washing station in Ethiopia’s Gedeo Zone, grown at 1,700m. It’s got a sister lot from the exact same farms, processed natural instead of washed, if you fancy something heavier and fruitier.
