This coffee is the rich, sweet one. Instead of being washed, the whole cherry gets dried on raised beds for about three weeks, so the fruit sugars soak straight into the bean as it dries — that’s what gives you raspberry, blueberry, a bit of chocolate, and that properly juicy mouthfeel. It comes from the same Beloya washing station and the same smallholder farms as our washed Ethiopia, grown in Ethiopia’s Gedeo Zone. It’s the sister lot to our washed Beloya — same farms, same trees even, completely different process and a totally different mood in the cup.
